Fitzpatrick Castle Hotel in Killiney is marking its 50th anniversary with an inspirational and innovative transformation this year.
The castle first opened its doors to guests in 1971 by Paddy and Eithne Fitzpatrick and since then, the hotel and the team have become one of the leading destinations in Ireland. Today, Eithne Fitzpatrick & Mark Scott-Lennon own and run the hotel together with their long-serving and talented team. They continue to adapt and innovate each decade, but none more so than this year.
During COVID-19, the family-owned property remained open retaining key members of the team as well as supporting the local community. Eithne & Mark also took the opportunity to create some new spaces including hugely popular The Terrace at the Castle which is open daily, offering homemade cakes, snacks, as well as the iconic Castle Burger and fresh local fish. The innovation continues at The Terrace with a drive-through coffee option for busy drivers who want to grab and go and is perfect for those rainy days.
Mapas Restaurant at the Castle is developed from the original 13 bedroom hotel purchased by Paddy Fitzpatrick in 1971. The 3rd generation family business has recently been joined by Executive Chef Paul Hickey who brings Mapas to a new level with a newly designed menu with the very best of Irish and locally sourced seasonal produce. “We are proud to work with the best Irish suppliers for our food and produce. FX Buckley for our meats and Wrights of Marino for our seafood,” says Paul.
In addition to this, Fitzpatrick Castle Hotel’s new, stylish cocktail bar was designed by the owner Eithne and where mixologist Marius created their new 50th celebration cocktail with Hennessy Cognac and is paired with Grand Marnier including Tonka Bean and fresh egg whites served with Prosecco with a golden sprayed meringue on the side for a drink that pays tribute to the Castle’s Golden Year. This limited-edition signature cocktail is also available at Mapas Restaurant at the Castle’s underground-level dungeon pre-dinner cocktail bar.
With its exceptional location at the foot of Killiney Hill overlooking the scenic Dalkey Bay and half a century worth of experience, it is no surprise that the Fitzpatrick Castle Hotel team epitomises hospitality excellence.
